Tequila
Much like Champagne or Cognac, Tequila is a highly regulated spirit category. By regulation, the only species of agave that can be used in Tequila is the Blue Weber Agave, and it can only be produced in four states in Mexico. There are four primary categories of Tequila: Blanco/Silver/Plata, Reposado, Añejo and Extra Añejo.

Mezcal
Though the term “mezcal” is often used casually to refer to any non-tequila agave spirit, it legally refers to product that is certified by a regulating organization. A certified mezcal can be made with any of the hundreds of agave species in any of nine designated states including Oaxaca, Durango, Michoacan, Guerrero, San Luis Potosi, Puebla Tamaulipas, Zacatecas & Guanajuato.
